Chocolate Spice Zucchini Cake
1⁄2 cup butter
1⁄2 cup oil
1 3⁄4 cups sugar
1 tsp. vanilla
1⁄2 cup sour milk (add lemon juice to your milk to sour)
4 TBS. cocoa
1⁄2 tsp. baking powder
1 tsp. baking soda
1⁄2 tsp. each cinnamon and cloves
2 1⁄2 cups flour (I use gluten-free)
2 tsp. grated orange peel
2 cups diced or shredded zucchini
1 1⁄2 cups chocolate chips
1⁄2 cup walnuts (optional)
TO MAKE THE CAKE: Preheat the oven to 350^F. Generously oil and flour a 9x12x2 baking pan.
In a medium bowl, whisk together the flour, cocoa, baking powder, orange peel, baking soda, cinnamon, and cloves. Set aside.
In a large bowl, using an electric mixer, cream the butter, oil and sugar. Add the eggs, sour milk, and vanilla extract. Beat just until blended.
Gradually beat in half of the flour mixture. Beat in the remaining flour mixture. Stir in the zucchini and walnuts. Scrape into the prepared pan.
Sprinkle the top with chocolate chips Bake at 325 degrees for 40 to 45 minutes, or until a wooden pick inserted in the center comes out clean.
